Caramel Thari Kachiyathu | Semolina Drink | Thari Kanji
Quick to blend, impossible to stop at one glass. This drink is a staple across Kerala homes, especially during the summer months when the heat demands something cold and reviving.
Ingredientsfor 4 servings
- 1/4 cup Semolina
- 1/4 cup Sugar for caramelizing
- 1/2 cup Sugar
- 10 nos Cashew nuts
- 10 nos Raisins
- 1 tbsp Ghee
- 2 cup Milk
- 1 pinch Salt
- 2 cup Water
- 4 nos Cardamom — powdered
Preparation
Step 1
Get a thick bottomed pan and add ¼ cup sugar for caramelizing. Keep the flame low to medium.
Step 2
When the sugar is caramelized and the color goes golden brown, pour water carefully. Stir slowly and melt the caramelized sugar in water.
Step 3
Now pour milk into it and keep the flame low.
Step 4
Meanwhile, heat ghee in a pan and roast cashews and raisins.
Step 5
Next, add rava(semolina) and roast for 5-8 minutes in low to medium flame.
Step 6
When the rava is roasted very well, take it off the heat.
Step 7
When the previously prepared milk mixture starts to boil, add roasted rava mix into it.
Step 8
Add cardamom and salt.
Step 9
Add remaining 1/2 cup sugar.
Step 10
Stir everything together thoroughly and Bring to a rolling boil. Once it comes to a boil, turn off the heat and set it aside. Let it cool.
Step 11
Serve Caramel Thari Kachiyathu.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
