Capsicum Thoran
an easy to prepare tasty and vegetarian side dish that goes well with hot rice. A rare and innovative healthy dish. Capsicum Thoran can be prepared in a jiffy with very limited ingredients.
Ingredientsfor 4 servings
- 2 nos Capsicum chopped, big size
- 1 nos Onion chopped, small size
- 1 cup Coconut — grated
- 3 nos Green chillies
- 3 Cloves garlic
- 1/2 tsp Cumin
- 2 sprig Curry leaves
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
- 1/2 tsp Mustard
- 4 nos Dry red chillies
- Salt, to taste
Preparation
Step 1
For preparing Capsicum Thoran, grind coconut along with green chillies, garlic, cumin and turmeric powder without adding water. The masala should be of dry consistency.
Step 2
Pour oil into a pan and heat it and let the mustard seeds crackle.
Step 3
Add curry leaves, red chillies, chopped capsicum and onion along with little turmeric powder and salt.
Step 4
Cook it by keeping the pan open. (don`t cover it with a lid).
Step 5
When the capsicum is half done, add the coconut masala and mix it well.
Step 6
Keep it in the fire till it is done and the thoran is dry enough to serve.
Step 7
Serve while still hot with rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
