Capsicum Aviyal
Aviyal (avial) is a preparation made with mixed vegetables, curd, coconut and seasoned with coconut oil and curry leaves.
Ingredientsfor 4 servings
- 1 cup Mixed vegetables
- 1 cup Capsicum
- 2 Green chili
- 1/2 cup Coconut
- 1 tsp Jeera
- 1 tsp Coconut oil
- Curry leaves fistful
- 2 Tblsp Curd
- Salt as taste
Preparation
Step 1
Cut all vegetables and set aside.
Step 2
Now boil vegetables with little water.
Step 3
Grind coconut, green chili, jeera and set aside.
Step 4
Once veg boiled add coconut paste Stir everything together thoroughly cook for about 2 minutes.
Step 5
Add curd and salt and Stir everything together thoroughly.
Step 6
Heat coconut oil and pour into aviyal and garnish with curry leaves.
Step 7
Now its ready to serve Capsicum Aviyal.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
