Cabbage Upperi Easy
Finely chopped cabbage stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 1 nos Cabbage or 1/2 big, small
- 5 nos Garlic pods — peeled
- 4 - Green chillies — slit
- 1 tbsp Coconut — grated, optional
- 2 tsp Oil
- 10 - Curry leaves
- 1 tsp Mustard seeds
- Salt, to taste
Preparation
Step 1
Chop the cabbage very finely or grate it.
Step 2
After washing it, let it drain for 10 - 15 minutes.
Step 3
Crush once and then chop the garlic finely.
Step 4
Mix together cabbage, garlic and salt.
Step 5
Set a pan over medium heat and pour in the oil or a kadai.
Step 6
Let the mustard seeds crackle.
Step 7
Add the green chillies and curry leaves.
Step 8
Immediately, add the mixed cabbage and Stir everything together thoroughly.
Step 9
Cover the pan and reduce the heat to medium - low.
Step 10
After 5 minutes, remove the lid.
Step 11
Add coconut, if desired and give it a good stir.
Step 12
Put the lid on and cook, till the cabbage is done.
Step 13
Check for salt.
Step 14
Fry it on high heat for a minute.
Step 15
We like the cabbage a bit on the crisp side, so I do not cook it much. There is no need of water. Just keep an eye so that it soes not stick at the bottom of the pan.
Step 16
Goes well with rotis or with rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
