Cabbage Thoran - Nadan Style
Finely chopped cabbage stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 1 nos Cabbage nicely — chopped
- 4 nos Shallots medium size
- 1 cup Coconut — grated
- 3 nos Green chilli
- 1/2 tsp Turmeric powder
- 1 sprig Curry leaves
- Salt, to taste
- 3 tsp Oil
- 1/2 tsp Mustard seeds
Preparation
Step 1
Pour oil into a kadai and heat it.
Step 2
Allow to crackle the mustard seeds and then add curry leaves.
Step 3
Add the chopped cabbage, salt and turmeric powder then sautT well (do not add water). Close the kadai with a lid.
Step 4
Get a mixer and add the coconut, shallots and green chillies. Just beat it. :- Don¦t make it as a paste, but make sure that the shallots and green chillies are shredded.
Step 5
Add the ground coconut mixture to the cooked cabbage and Stir everything together thoroughly.
Step 6
Keep it in the low flame for another one minute and take it off.
Step 7
Note:- Add urad dal with mustards, this will give a different taste to thoran.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
