Cabbage Thoran Easy
The everyday side dish that Kerala never tires of. Cabbage is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 1 cup Cabbage — finely chopped
- 1 cup Onion — finely chopped
- 6 nos Green chillies — cut into small pieces
- ½ cup Coconut — grated
- 1/2 tsp Turmeric powder
- Coconut oil, to taste
- 1 tsp Mustard seeds
- 1 - Red chillies (Kollamulaku)
- Curry leaves A, a few
Preparation
Step 1
For preparing the healthy, delicious dish first mix together the finely chopped cabbage, onions, chillies, grated coconut, turmeric powder and salt.
Step 2
Set a pan over medium heat and pour in the oil or a kadai. Add mustard seeds and allow it to allow to crackle.
Step 3
Next, add dry red chillies and curry leaves to it.
Step 4
Stir in the mixture into the kadai and allow to cook it on low heat.
Step 5
Stir in between and make sure that the thoran does not stick to bottom. Sticking to bottom of pan imparts a smoky flavor to dish and will destroy the rich flavor.
Step 6
When the cabbage is cooked well, take it off the heat. Also make sure that cabbage is not over cooked. Serve the thoran dish with hot rice for noon day meals.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
