Cabbage-n-Wine
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 250 g Cabbage chopped into chunks, coarse not — finely chopped
- 8 Pcs Garlic
- 1/4 tbsp Gignger — minced
- 2 nos Green chillies — sliced
- 3 tbsp Onion — finely chopped
- 1/4 tbsp Black pepper powder
- 3 tbsp Vegetable oil
- 60 ml Water
- 45 ml White wine
Preparation
Step 1
Heat veg oil in a flat pan, stir fry ginger and garlic for 30 seconds.
Step 2
Add onion, green chillies and stir fry for another 30 seconds.
Step 3
Add coarsely chopped cabbage and stir fry for 30 seconds.
Step 4
Add 60 ml water, cover the pan and Let it cook for 2 minutes.
Step 5
Remove the lid, stir the entire stuff and add 45ml of white wine.
Step 6
Sprinkle pepper powder and keep on stirring till the entire mix is almost dry.
Step 7
Cabbage-n-Wine is ready! :- Cabbage-n-Wine! :- Cabbage-n-Wine is a good complementing combo with spicy chicken / fish curry + rice meals.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
