Cabbage And Carrot Fritters
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 3 Tbps Flour
- 2 Eggs, beaten
- ¼ tsp Baking Powder
- 2 tbsp Milk
- 1 tbsp Coriander leaves — chopped
- 1 cup Cabbage — shredded
- 1/3 cup Carrot — shredded
- 4-5 nos Green chilies
- Vegetable oil
- Salt, to taste
Preparation
Step 1
In a large bowl, mix all the ingredients except the oil.
Step 2
Heat the oil in a frying pan, Scoop in about 2 tbsp of the batter for each fritter and fry on each side until deep golden brown.
Step 3
Lay them on a paper towel lined plate to soak up any extra oil.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
