Bull's Eye Egg Masala | Bull's Eye Egg Roast
A proper Kerala fry — egg tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 1 servings
- 1 nos Onion
- 1 nos Green chilly
- 3/4 tsp Pepper powder
- Salt, as needed
- 2 nos Egg
- 1 tbsp Oil
- Curry leaves, a few
Preparation
Step 1
Chop onion, green chilly and curry leaves.
Step 2
Set a pan over medium heat and pour in the oil and add chopped onion, green chilly, curry leaves, pepper powder and salt to taste. Let it cook for 5 minutes in medium flame.
Step 3
Break the eggs one by one slowly into the two sides (without touching each one) of the pan. After adding eggs don't stir the pan. Allow to cook (partially cover the pan with a lid) for about 10 minutes until the eggs get cooked and gets a nice bull's eye texture.
Step 4
Turn off the heat and serve it hot as a side dish with roti !
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
