Brown Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 4 servings
- 500 g Rice
- 2 nos Onions — finely chopped
- 4 nos Bay leaves Karuva ela
- 4 nos Cardamom (Elakka)
- 4 nos Cloves (Grambu)
- 2 nos Cinnamon broken into bits (Karugapatta)
- 6-8 nos Pepper corns
- 1 tsp Cumin seeds (Jeerakam)
- 6-8 tbsp Oil
- Salt, to taste
Preparation
Step 1
For preparing brown rice, fry the onions till they turn lightly browned.
Step 2
Add bay leaves, cardamoms, cloves, cinnamon, peppercorns and cumin seeds. Continue frying till the onions turn dark brown.
Step 3
Add the rice along with the salt and stir for a minute.
Step 4
Pour in enough water for the rice to cook.
Step 5
Brown rice is ready. Serve hot with any vegetable or meat dish.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
