Brotherªs Chicken
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 2 servings
- 1 kg Chicken
- 2 inch Ginger chopped lengthwise
- 8-10 Cloves Garlic — sliced
- 2-3 nos Onion — sliced
- 1/2 tsp Cinnamon powder (Karugapatta)
- 6-8 nos Green chillies — slit
- Turmeric powder A pinch
- 1-2 tbsp Chilly powder depending on your spice level
- 2 tbsp Coriander powder
- 2 nos Tomato — chopped
- Curry leaves A handful
- Salt Ads reqd
- Oil, to taste
Preparation
Step 1
Clean chicken and cut into small pieces. Wash well and drain.
Step 2
Heat the oil in a non-stick pan, add ginger pieces and stir for couple of minutes. Then season onions until slight brown along with the garlic.
Step 3
Stir in the green chillies and stir for a minute or so. Now add curry leaves, chilly powder, turmeric powder, coriander powder and keep stirring. You need to let the mix fry a bit and let the aroma come.
Step 4
Add the chicken pieces to the mix and add half a cup of water. Close the pan and cook it with occasional stirring. Gravy should be thick. Now you add the cinnamon powder, mix and ready to serve!
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
