Broken Wheat With Veggies Salad
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 1/4 cup Broken wheat Gothambu rava
- 1/4 cup Cucumber — chopped
- 1/4 cup Tomato — chopped
- 1/4 cup Onion — chopped
- 1/4 cup Capsicum — chopped
- 1 Spring Curry leaves
- 1 tbsp Lemon juice
- Pepper powder A pinch
- Coriander leaves — chopped
- 1 tsp Peanuts — roasted
- 1/2 tbsp Coconut oil
- Sugar A pinch
- Salt, to taste
Preparation
Step 1
For preparing broken wheat with veggies, take a vessel, add water and required salt to the broken wheat. Allow it to boil. Lower the flame and Put the lid on and cook untill the broken wheat is done and all the water has evaporated.
Step 2
Remove the cooked broken wheat from the fire and allow it to cool.
Step 3
Place a pan on the stove, heat coconut oil and sute tomato, onion, capsicum, curry leaves, lemon juice, pepper powder, sugar and required salt. Toss it well.
Step 4
Carefully fold in the cooked broken wheat and cucumber. Mix it.
Step 5
Garnish with coriander leaves and peanuts.
Step 6
Broken wheat with veggies, a nutritious as well as Salad, is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
