Brocoli Thoran
Finely chopped mixed stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.

- Brocoli
- Chilies
- Onions
- Coconut — grated
- Turmeric powder
- Mustard seeds
- Cumin seeds coconut oil
- Salt
- Red chilies
- Curry leaves
Preparation
Step 1
Cut broccoli in a food prosser or a mixie or a with hand to really fine dots (pieces).
Step 2
Grind green chlies in a food processeser or mixie or by hand to fine pieces (the pieces should only taste in the thoran it should not be seen).
Step 3
Mix grated coconut (the more coconut the better the taste, i us sully add a quite a bit).
Step 4
Mix a pinch of turmeric powder (just a pinch nothing more),.
Step 5
Add salt and add finely dice onions (add a little extra).
Step 6
Heat pan with oil.
Step 7
Sputter mustard seeds and cumin seeds (put a litle extra cumin seeds because the thoran needs a little sweetish/ mitish taste).
Step 8
Add dried red chilies currie leaves and cook it, stirring for a minute now add the broccoli mxture and stir fry it maximum for 2 or 3 miniutes (not more). :- Serve this with rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
