Broasted Chicken
Slow-roasted in coconut oil with a generous hand of spices, this chicken fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 10 Pc Chicken medium sizes
- 1/4 tsp Turmeric powder
- 2½ tsp Red chilly powder
- Garam masala A pinch
- 1 nos Lemon
- 1 nos Egg
- Flour half cup
- Corn flour half cup
- 2 tbsp Water
- Salt, to taste
Preparation
Step 1
Marinate the chicken with chilly powder, turmeric powder, garam masala, salt, lemon and water as needed for 2 hours.
Step 2
Cover it in egg, corn flour and maida.
Step 3
Heat the oil in a vessel and fry it, till it turns brown color.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
