Brinjal(Kathirikka) Fry
Brinjal Fry also called as vankaya fry is one of the easiest brinjal recipes to make with basic ingredients. It pairs well with rice or roti. The spice marinated brinjal pieces are fried in a tawa.
Ingredientsfor 2 servings
- 2-3 nos Brinjal medium size Kathirikka
- 11/2 tsp Chilly Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Pepper powder
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Cut the brinjals into thin slices in oval/round shape.
Step 2
Mix chilly, turmeric, pepper powders and salt.
Step 3
Marinate the brinjal pieces with the above mixture and set aside for 1/2 hour. Note:- There should not be any water content in the mixture.
Step 4
Heat the oil in a flat frying pan.
Step 5
Put the marinated pieces and fry in low flame. Turn the pieces upside down when one portion is done, just like frying fish.
Step 6
Fry until the desired crispness is achieved. :- Some may like it soft and some may like it crisp. Take care not to burn the pieces.
Step 7
Serve while still hot with rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
