Brinjal-Vazhuthananga In Yogurt

Ingredientsfor 2 servings
- 5 nos Brinjal — chopped
- 3 nos Red chillies broken into two
- 2 Springs Curry leaves
- 1 tsp Mustard seeds
- 2 tsp Coconut oil
- 3/4 cup Yogurt
- Salt, to taste
Preparation
Step 1
For preparing binjal in yogurt, cook the brinjal with required amount of water and salt. Drain the water well.
Step 2
Mix the brinjal with yogurt.
Step 3
Warm coconut oil in a pan and let the mustard seeds crackle. Then add red chillies and curry leaves.
Step 4
Pour it into the yogurt mixed with brinjal and Stir everything together thoroughly.
Step 5
Brinjal/vazhuthananga in yogurt is ready. Serve with plain rice.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
