Brinjal Smash
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 8 servings
- 3 nos Brinjal Vazhuthananga
- 1 nos Onion
- 3 nos Garlic pods
- Tamarind( ) paste for taste (Puli)
- Salt, to taste
- 1/2 Spoon Chilly powder
- 1 pinch Turmeric powder
- 2 sprig Curry leaves
- Coconut oil, to taste
Preparation
Step 1
Cut brinjals into small pieces and fry well in coconut oil. Set aside.
Step 2
Fry onion and garlic in the remaining oil.
Step 3
Add fried brinjal and mix.
Step 4
Add chilly powder and turmeric powder. Mix and fry for a while.
Step 5
Add tamarind paste and salt and few drops of water. Stir everything together thoroughly.
Step 6
Cook for about 2 minutes.
Step 7
Smash it well and add fried curry leaves.
Step 8
You can use it with biriyani and rice, or as a substitute for pickle.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
