Brinjal Potato Varutharacha Curry
It is a nice tasty curry for rice. - Brinjal potato varutharacha curry.
Ingredientsfor 4 servings
- 1 cup Brinjal — chopped
- 1 Tomato
- 1 Onion
- 1 cup Coconut — grated
- 1 tsp Tamarind paste
- 1 tsp Salt
- 5 Curry leaf
- 4 Chilly
- 2 Dry red chilly
- 1 tsp Mustard
- 2 tsp Coconut oil
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Chilly powder
Preparation
Step 1
Set a kadai over medium heat and pour in the oil add grated coconut,chilli powder,turmeric powder and coriander powder,Let it cook for 2 minutes in stove.
Step 2
Switch off gas until the coconut turns brown.Allow it to cool.
Step 3
Grind this mix in mixer and set aside.
Step 4
Set a kadai over medium heat and pour in the oil and add onions, Let it cook for 2 minutes.
Step 5
Add tomatoes and cook for 2 min low flame.
Step 6
Add the grind mix to this and Let it cook for 2 minutes.
Step 7
Add cooked brinjal,cooked potatoes and grind mix and tomato mix in a big vessel let it bubble for 2 minutes.
Step 8
Let it cook for 5 minutes until gravy becomes thick.
Step 9
Pour oil into a kadai and heat it add mustard,dry red chilly and curry leaf add this tempering to curry.
Step 10
Add this tempering to curry and is ready to serve.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
