Brinjal Potato Masala
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- Boiled and cut Potato : 1 cup
- Cleaned and cut Brinjal : 1 cup
- Cleaned and cut Tomato : 1 cup
- Cleaned and cut Onion : 1 cup
- Cleaned and cut garlic : 1 tsp
- Cleaned and cut Ginger : 1 tsp
- Cleaned and cut Coriander leaves : 2 tsp
- Chilli Powder : 2 tsp
- Turmeric Powder : 1 tsp
- Garam Masala : 1 tsp
- Salt, to taste
Preparation
Step 1
Heat the brinjal pieces in some oil for about five minutes and then take it out and set aside.
Step 2
Also heat the onion pieces in the same way.
Step 3
Add the tomato pieces into the heated onion and mix it well.
Step 4
Add the chilli powder, turmeric powder, garam masala and salt into the tomato and onion mix and stir this mix till the colour turns into golden.
Step 5
Add the boiled potatoes and Brinjal into this mix of onion and tomato with masala.
Step 6
Stir this Stir everything together thoroughly and allow to boil it for about minutes and if you want fried masala, turn off the heat and remove the masala from the stove.
Step 7
If you want to make gravy masala then add some water (as needed) into this mix and allow it to boil for further five minutes time.
Step 8
This masala can be served with Chappathi, Poori, rice etc.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
