Brinjal Piralen
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 11/2 cup Brinjal — cut into pieces
- 1/2 cup Onion chopped roughly
- 3/4 cup Tomato — cut into pieces
- 1/4 tsp Sugar
- 1 Dsp Coriander leaves — chopped
- Oil, to taste
- Salt, to taste
- 1/2 Dsp Onion pieces
- 2 nos Dry red chillies
- Cinnamon Small piece
- 1/2 Dsp Coriander powder
- Turmeric powder A pinch
- 1 nos Cloves (Grambu)
- 1 nos Cardamom (Elakka)
- 1/4 tsp Cummin seeds (Jeerakam)
Preparation
Step 1
Grind together the ingredients for preparing brinjal masala: onion pieces, red chillies, cinnamon, coriander powder, turmeric powder, cloves, cardamom and cummin seeds to a fine paste.
Step 2
Set a pan over medium heat and pour in the oil.
Step 3
Fry the brinjal pieces until golden.
Step 4
Add the onions and fry.
Step 5
Add the ground masala and fry till oil accumulates on top.
Step 6
Stir in tomato pieces and add required salt. Continue frying in medium heat.
Step 7
Pour 1/2 cup water into the gravy and stir in sugar. Heat the curry.
Step 8
When the gravy has acquired the desired consistency, remove from fire.
Step 9
Brinjal piralen is ready and garnish with coriander leaves. Serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
