Brinjal Masala - Simple And Spicy
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 4 nos Brinjal Vazhuthananga
- Salt, to taste
- 1/4 tsp Turmeric powder
- 1/2 tsp Chilly powder
- 5 - small Onion (Kunjulli)
- 1 nos Onion finely chopped, medium
- 1" piece Ginger
- Green chillies, to taste
- 1 tsp Cumin seeds (Jeerakam)
- 2 nos Tomato finely chopped, small
- 1 tsp Mustard seeds
- Cooking oil — for deep frying
- 2 tbsp Coriander leaves — chopped
Preparation
Step 1
For preparing the delicious dish, first mix together chilly powder, salt and turmeric powder into a paste with little water.
Step 2
Slice brinjal into small pieces. Apply spice mix on the inner faces and set aside for 30 minutes.
Step 3
Grind together small onions, ginger, green chillies and cumin seeds into a fine paste.
Step 4
Warm the oil in a pan or a kadai.
Step 5
Fry in hot oil brinjal and set aside.
Step 6
Remove the oil leaving 1 tbsp in the pan. Add Mustard seeds and let it allow to crackle.
Step 7
Next, add onion and fry, till it turns brown.
Step 8
Add ground paste and fry, till oil separates.
Step 9
Add tomato, salt and little sugar.
Step 10
Mash tomato well and add enough water as per required consistency.
Step 11
Bring to a rolling boil.
Step 12
Add brinjal and Put the lid on and cook for about 5 minutes on a low flame.
Step 13
Remove brinjal and place them on a serving dish.
Step 14
Pour the gravy over them.
Step 15
Garnish with coriander leaves.
Step 16
Serve Brinjal Masala hot.
