Brinjal Masala Restaurant Style
Sliced brinjal is cooked with egg masala powder and other ingredients.
Ingredientsfor 4 servings
- 4 nos Brinjal — sliced
- 1 nos Onion — chopped
- Ginger crushed) – 1 tbs
- 1 tsp Garam masala
- 2 nos Tomato
- 1 tsp Turmeric powder
- 2 tsp Chilli powder
- 1 tsp Pepper
- 1 tbsp Egg masala powder
- Water, to taste
- 1 tsp Mustard
- Salt, to taste
Preparation
Step 1
For preparing brinjal masala, first Heat the oil in a kadai and let the mustard seeds crackle. Add onion, crushed ginger-garlic mixture and fry well.2)Then add turmeric, chilli powder, pepper, egg masala, garam masala and fry again.
Step 2
Add tomatoes, brinjal, salt and little water.Put the lid on and cook well.4)Brinjal masala is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
