Brinjal Dry Fish Curry
This homestyle fish curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 3 nos Brinjal — sliced
- 4 nos Dry fish — sliced
- 5 nos Green chillies — chopped
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Tamarind water, to taste
- Water, to taste
- 2 nos Red onion — chopped
- Coconut Half of one
- 1 tsp Mustard seeds
- Coconut oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing brinjal dry fish curry, cook brinjal, fish, green chillies, chilly powder, turmeric, tamarind water with required water.
Step 2
Grind coconut and red onion. Add it to the curry and boil.
Step 3
When done, season it with mustard seeds.
Step 4
Brinjal dry fish curry is ready.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
