Brinjal Coconut Stir Fry
Slow-roasted in coconut oil with a generous hand of spices, this coconut fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 2 cup Brinjal chopped/sliced
- 1 cup Coconut
- 1 tsp Cumin seeds
- 2 nos Green chillies
- 1 nos Onion — chopped
- 1 tsp Mustard seeds
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing brinjal coconut stir fry, heat oil and let the mustard seeds crackle.
Step 2
Add onion and brinjal. Fry well till half cooked.
Step 3
Add turmeric and cover.
Step 4
Crush coconut, chillies and cumin seeds. Add this to brinjal and cook.
Step 5
Add required salt and fry well.
Step 6
Brinjal coconut stir fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
