Brinjal And Potato Stir Fry
Brinjal and potatoes are cooked with other ingredients to make a tasty side dish.
Ingredientsfor 4 servings
- 6 nos Brinjals Vazhuthananga
- 2 nos Potatoes
- Salt, to taste
- 1 nos Onion — sliced
- 2 nos Green chillies — chopped
- Turmeric powder A pinch
- Curry leaves A, a few
- 1/4 tsp Mustard seeds
- 2 tbsp Oil
Preparation
Step 1
For preparing brinjal and potato stir fry, slice the brinjals and potatoes lengthwise.
Step 2
Boil the potatoes in water till it is half cooked. Drain water and set aside.
Step 3
Heat oil and crackle mustard seeds. Add the brinjal and boiled potatoes. cook until it softens a bit.
Step 4
Next, add sliced onion, green chillies and turmeric powder. Add about 3 tbsp water. Stir and cover it till the water gets evaporated and the vegetables are cooked.
Step 5
Add salt and curry leaves. cook for about 3 minutes.
Step 6
Brinjal and potato stir fry is ready.
Step 7
Tip: Keep the cut brinjal in water, so that it does not change colour. You can omit the chillies if you want and add about 1/2 tsp red chilly powder instead. If meant for small children, there is no need to put the chilly at all.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
