Bread Uppuma With Vegetables
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 2 servings
- 7 slice Bread remove crumbs and break into small pieces
- 1 nos Onion sliced thin, small size
- 1 nos Chillies — cut into small pieces
- 1 nos Carrot — cut into small cubes
- 1 nos Tomato — cut into small pieces, small size
- 1 nos Red Potato — cut into small cubes, small size
- 1 piece Ginger — cut into small cubes
- 1 tsp Turmeric powder
- 1/2 tsp Chilli powder
- 3 tsp Oil
- Mastard seeds
- Coriander leaves
- Salt, to taste
Preparation
Step 1
Pour oil into fry pan.
Step 2
Add mustard seeds and allow it to allow to crackle.
Step 3
Add chopped onions, ginger and then cook until onions are light brown.
Step 4
Add carrot cubes, potato cubes and chillies to it. cook for few more time.
Step 5
Add tomato and cook well.
Step 6
Add turmeric powder, chilly powder, salt and then cook until tomato dries up partially.
Step 7
Sprinkle some water to it for mixing.
Step 8
Add bread pieces to it and cook until bread pieces gets mixed well.
Step 9
Get it out and transfer to plate.
Step 10
Garnish with coriander leaves.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
