Bread Uppuma - Kerala Style
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 4 servings
- 10 nos Bread slices
- 3 - Green chilles
- 1 nos Onion big
- 1 nos Potato
- 3 tsp Ghee
- 1 tsp Chicken masala/Garam masala
- 1 tsp Oil
- Coriander leaves — finely chopped
- Curry leaves A, a few
Preparation
Step 1
Boil and mash the potato.
Step 2
Chop onions and chillies.
Step 3
Cut the side crumbs of the bread slices and slice them into small squares.
Step 4
Heat the ghee in a tava.
Step 5
Fry the bread slices till golden brown, stirring continuously, to avoid burning. Set aside.
Step 6
In the same tava, heat the oil.
Step 7
Season with red chilly and mustard seeds(optional) and fry onions till transparent.
Step 8
Add chillies and curry leaves and cook well.
Step 9
Add masala and salt to taste.
Step 10
Add mashed potatoes and Stir everything together thoroughly.
Step 11
Add the bread slices and curry leaves to the mixture and stir till the mixture is evenly spread.
Step 12
Garnish with coriander leaves. Serve hot.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
