Bread Uppuma
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 2 servings
- 6 piece Bread Slices
- 3 nos Green chillies — chopped
- 1 nos Onion — cut into small pieces
- 1 small Ginger — chopped
- Curry leaves, a few
- Mustard seeds — for seasoning
- 1/4 tsp Turmeric powder
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Crush bread pieces with your hand to a coarse form.
Step 2
Warm the oil in a pan and let the mustard seeds crackle and curry leaves.
Step 3
Add onion, green chillies and ginger. Add some salt and cook well.
Step 4
Put the ground bread into this followed by a few turmeric powder. Bread uppuma is ready within minutes.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
