Bread Rolls
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 10 nos Bread slices
- 3 nos Carrot — grated
- 3 nos Potato cooked and mashed well
- 1 nos Onion — thinly sliced
- 4 nos Green chillies — finely chopped
- ½ tsp Red chilly powder
- ½ tsp Garam masala powder
- 1 tbsp Coriander leaves — chopped
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Heat a tbsp of oil in a pan or a kadai.
Step 2
Add onion and sautT well.
Step 3
Add green chillies and sautT again.
Step 4
Add chilly powder and garam masala powder and cook well.
Step 5
Add grated carrot and mashed potato and Stir everything together thoroughly.
Step 6
Take it off the heat.
Step 7
Dip a bread slice in water and press firmly within your palms to get rid of the excess water.
Step 8
Place a tbsp of the above mixture on it and roll it well.
Step 9
Fry in hot oil them in hot oil, till they turn brown in colour.
Step 10
Repeat the same procedure for the rest of the slices.
Step 11
Goes well with tomato sauce.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
