Bread Roast
A proper Kerala fry — egg tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 1 servings
- 3 nos Bread slices
- 2 nos Eggs
- 21/2 tbsp Sugar ie for 1 egg, add 1 and 1/4 tbsp
- Oil
Preparation
Step 1
Beat the eggs with sugar.
Step 2
For those who want it to be more sweet, more sugar(1/4 -1/2 tsp) can be added.
Step 3
Heat tava and brush with oil.
Step 4
Coat (do not soak) the bread slice with the egg batter on each side and immediately put on tawa.
Step 5
Repeat this for all the slices.
Step 6
Roast, until brown on both sides.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
