Bread Masala (White Bread)
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 8 slice Bread white
- 4 nos Onion big
- 1 nos Tomato
- 1/2 piece Capsicum
- 1 nos Carrot small
- 1/2 cup Peanuts
- 3 nos Green Chilly — chopped
- Mustard Seeds, as needed
- Cumin Seeds, as needed
- Black Gram, as needed
- Curry Leaves, as needed
- 1/4 tsp Turmeric Powder
- 1 tsp Ginger Garlic Paste
- Coriander Leaves, as needed
- Salt, as needed
- OPTIONAL — optional
- Fennel Seeds, as needed
- 1/2 tsp Garam Masala/Chat Masala any one
Preparation
Step 1
Toast the Bread with butter (Optional).
Step 2
Cut the bread into small cubes. 9 cubes per slice/16 cubes per slice. Set aside.
Step 3
Temper the mustard seeds, cumin seeds, black gram, curry leaves and ginger garlic paste for a minute.
Step 4
Cook the onions till they are golden and translucent. Add turmeric powder and salt to taste.
Step 5
Add capsicum, carrot and peanuts and cook till tender.
Step 6
Add tomatoes and cook till tender.
Step 7
Add the bread cubes into the mixture and mix slowly and carefully so as not to break the bread cubes further. Make sure the bread cubes are coated with the above ingredients.
Step 8
Garnish with lemon juice (few drops only) and coriander leaves. Serve warm.
Step 9
Fennel seeds and Garam/Chat Masala can be added for taste.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
