Bottle Gourd Curry - Delicious Curry
Rich, fragrant, and full-bodied — this mixed curry gets its depth from slow-cooked shallots and a careful balance of chilli heat and tang. Serve with appam, rice, or porotta.
Ingredientsfor 4 servings
- 1 kg Bottle gourd
- 1 cup Coconut
- 2 Cloves Garlic
- 1 tbsp Cumin seeds
- 1 tbsp Red chilli powder
- 1 tbsp Turmeric powder
- Salt, to taste
Preparation
Step 1
Peel the skin of Bottle gourd and cut it into small pieces.
Step 2
Add turmeric powder, chilli powder and salt to the Bottle gourd in a pressure cooker.
Step 3
Add little water. :-Do not add too much of water; since water comes out of itself when it boils.
Step 4
Cook for two whistles.
Step 5
Grind coconut, garlic and cumin to a fine paste.
Step 6
Add the ground paste to the cooked bottle gourd and allow it to boil.
Step 7
The delicious curry is ready to be served hot!
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
