Black Eyed-Rajma Bean In Olive Oil
Black eyed/rajma bean, onion, capsicum and other ingredients are cooked in olive oil.
Ingredientsfor 4 servings
- 250 g Black eyed beans/Rajma bean boiled
- 1 nos Onion — chopped
- 1 nos Capsicum — chopped
- 1 tsp Chilly powder
- 1/2 tsp Ginger — chopped
- 1 Clove Garlic — crushed
- 1/4 tsp Vinegar
- 1 tbsp Coriander leaves — finely chopped
- 1 tbsp Olive oil
- Salt, to taste
Preparation
Step 1
First cook rajma beans with salt, turmeric powder, chilly powder and coriander powder in a pressure cooker. cook onion, garlic and ginger in heated olive oil. Add chilly powder and vinegar. Fry well.
Step 2
When the onion become translucent add chopped capsicum, cooked beans and salt.
Step 3
Mix and Let it cook for 5 minutes. Garnish with chopped coriander.
Step 4
Black eyed/rajma bean in olive oil, a healthy, easy to prepare side dish for rice, chappathy, roti, naan etc is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
