Bitter Gourd Fry (Paavakka Fry)
Pan-fried until the edges go dark and crispy, this bitter_gourd fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 3 servings
- 1/2 kg Bittergourd Pavakka
- Salt, to taste
- Oil, to taste
- Chilly powder, to taste
Preparation
Step 1
Cut bitter gourd in a slim and circular way.
Step 2
It should look like a ring.
Step 3
Warm the oil in a pan.
Step 4
When oil is hot, add bitter gourd rings and salt.
Step 5
Allow it to become brown.
Step 6
When it's done, add chilly powder and fry for another 10 minutes.
Step 7
Remove from fire.
Step 8
This goes well with curd rice, rasam, sambar and rice.
Step 9
Instead of bitter gourd, use potato also.
Step 10
Good with rice and condiments.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
