Birinji Choru
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 3 servings
- ½ kg Kuruva rice
- 1/2 tsp Turmeric powder
- 2 Tomato
- 1 ½ Onion
- 2 Green chilly
- 1/2 tsp Fennel seeds
- Salt, to taste
- Oil, to taste
- 1/2 tsp Garam masala
- Water, to taste
- Coriander leaves, to taste
- 1 Cardamom
Preparation
Step 1
Clean the rice and cook it with water and salt to taste. Drain the water and set aside.
Step 2
Heat the oil in a big vessel and sautT onion, tomato, green chilly, fennel seeds, turmeric powder, garam masala, cardamom and salt to taste in it.
Step 3
Mix in the cooked rice with this masala in low flame.
Step 4
Add coriander leaves and give it a good stir.
Step 5
Serve it hot.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
