Beetroot Kadala Thoran | Beetroot and Black Chickpeas Stir Fry
A healthy, protein-rich, and colorful vegetarian side dish for everyday meals or Onam Sadya.
Ingredientsfor 4 servings
- 11/2 cup Beetroot — grated
- 1/4 cup Cooked Black Chickpea Smashed with a fork
- 1/4 cup Coconut — grated
- 1 nos Onion — sliced
- 1 nos Green chilly — chopped
- 1/4 tsp Turmeric powder
- 1/2 tsp Red chilly powder
- 1/2 tsp Mustard Seeds
- Curry leaves, a few
- 2 tbsp Coconut Oil
- Salt, to taste
Preparation
Step 1
Pour oil into a pan and heat it, let the mustard seeds crackle followed by a few curry leaves.
Step 2
Add sliced onion and green chilly.
Step 3
Add grated beetroot.
Step 4
Add salt, turmeric powder and red chilly powder.
Step 5
Add grated coconut.
Step 6
Add cooked and mashed black chickpea.
Step 7
Fold everything together gently for 2-3 minutes. Cover and Let it cook for 5 minutes on low-medium heat. Give it a stir now and then.
Step 8
Serve alongside steamed rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
