Beef Varutharacha Curry
A traditional Kerala curry where beef simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 1 kg Beef
- 2 nos Onion — sliced
- 1 nos Onion cubes
- 2 nos Cardamom (Elakka)
- 3 nos Cloves (Grambu)
- 1 nos Cinnamon stick Karuvapatta
- 1 tsp Ginger — chopped
- 4 Cloves Garlic — chopped
- 1 nos Tomato — chopped
- 3 nos Green chillies
- 1 tbsp Coriander seeds
- 1 tbsp Chilly flakes
- 2 tsp Pepper powder
- 1 tsp Turmeric
- Salt, to taste
- 1 cup Curry leaves
- Coriander leaves — for garnishing
Preparation
Step 1
For preparing beef varutharacha curry, first heat pan, add oil.
Step 2
Fry cubed onion, cinnamon, cardamom, cloves, ginger and garlic.
Step 3
When it turns brown color, take it off the heat and allow to cool. Then grind it.
Step 4
Dry roast coriander seeds till light brown on simmer flame.
Step 5
Add chilli flakes and fry again. Powder the seeds when cooled.
Step 6
Heat pressure cooker. Fry the sliced onion and tomato. Add the ground onion paste and cook well. Add the turmeric, ground powder, pepper and salt.
Step 7
Add the beef cubes and Stir everything together thoroughly.
Step 8
Add 1/2 to 1 cup water and pressure cook the beef.
Step 9
When done, remove the lid and thicken the gravy. In another pan, pour 1 tbsp oil and fry the curry leaves and green chillies.
Step 10
Add this to the gravy and Stir everything together thoroughly. 11)Garnish with fresh coriander leaves. 12)Beef varutharacha curry is ready.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
