Beef Vartharachu Varatiyathu
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 4 servings
- ½ kg Beef
- 1 nos Onion slices
- 5 nos Green chillies
- 1 tsp Ginger — finely sliced
- 1 cup Coconut slices
- Curry leaves, a few
- 1 tbsp Pepper
- Salt, to taste
- 15 nos Shallots (Kunjulli)
- 1 piece Ginger
- 7 Cloves Garlic
- 1 nos Green chillies
- 1 nos Cardamom (Elakka)
- 2 nos Cinnamon (Karugapatta)
- 3 nos Cloves (Grambu)
- 1 nos Bay leaves ela (Karuga)
- 1 tbsp Meat masala
- 1 tbsp Coriander powder
- 1 tsp Chilli powder
- 1 tsp Turmeric powder
Preparation
Step 1
For preparing beef vartharachu varatiyathu, first clean and chop the beef into small pieces.2)In a kadai, heat 1 tbsp oil. Add ginger, garlic, onion, cardamom, cloves, cinnamon and bay leaves.
Step 2
When it turns color, add all the masala powders. Just heat for a few seconds but it should not be burnt. take it off the heat and cool. Grind to a smooth paste.
Step 3
In a pressure cooker, add little oil and heat. Add the ground paste and required salt. Fry till dark in color. Add the beef pieces and cook with little water.6)When done, drain the excess water by sauting it again. In a clay pot, add oil. Stir in onion, green chillies, ginger and fry well.
Step 4
Add the coconut slices and fry again.9)Add the beef pieces, pepper and curry leaves.
Step 5
Beef vartharachu varattiyathu is ready.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
