Beef Varala
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 4 servings
- 1/2 kg Beef
- 2 nos Onion
- 1/2 tsp Turmeric powder
- 1/2 cup Water
- 2 tbsp Oil
- 1 tbsp Ginger and garlic paste
- 2 nos Tomato
- 1 and 1/2 tbsp Oil
- 3 nos Green chillies
- Curry leaves, a few
- Salt, to taste
- 1 tbsp Pepper corns
- 1/2 tsp Fennel seeds
- 2 tbsp Coriander powder
- 1/2 tsp Chilly powder
- 1/2 tsp Garam masala powder
Preparation
Step 1
Wash, clean and drain the beef.
Step 2
Get a pressure cooker, add beef, onion, turmeric powder and salt to taste.
Step 3
Fold everything together gently.
Step 4
Pour water as needed. Pressure let it go for 5-6 whistles or until done.
Step 5
Mean while dry roast the ingredients that comes under the heading 'For Preparing Masala Powder'. Dry roast for 3 minutes and powder it after it gets cooled.
Step 6
Then heat 2 tbsp oil in a pan and add ginger garlic paste. stir for a few seconds.
Step 7
Add chopped tomato and cook until soft.
Step 8
Stir in masala powder and cook for one minute.
Step 9
Next, add cooked beef along with water.
Step 10
Cover cook until the gravy thickens on medium-low heat.
Step 11
Finally heat 1 1/2 tbsp oil in a small pan add green chilly and curry leaves. stir for a few seconds and pour it over the gravy.
Step 12
Super Beef Varala is ready.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
