Beef Thoran
The everyday side dish that Kerala never tires of. Beef is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 1/2 kg Beef
- 1 tsp Coriander powder
- 1/2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Pepper powder
- 3 nos Garlic pods
- 1 small Ginger
- 1 small Cinnamon (Karugapatta)
- 2 nos Cloves (Grambu)
- 1 nos Cardamom (Elakka)
- 1 small Nutmeg Jathikka
- 1 tbsp Vinegar
- Salt, to taste
- 1 cup Coconut — grated
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 tbsp Oil
- 1 tsp Mustard seeds
- 1/2 cup Onions — chopped
- 2 tsp Green chillies — chopped
- 1 tsp Ginger — chopped
- Curry leaves A sprig
Preparation
Step 1
Cut meat into small pieces after removing fibres and fat.
Step 2
Grind the coriander, chilli, turmeric, pepper, garlic, ginger, cinnamon, cloves, cardamom and nutmeg.
Step 3
Mix the masala paste, meat, vinegar and salt and cook till it becomes very soft and the water is all absorbed.
Step 4
Mince the meat in mincer or crush the meat and shred it.
Step 5
Grind cumin seeds and crush coconut.
Step 6
Heat 1/4 cup oil in a pan.
Step 7
Add mustard seeds and when they allow to crackle, add onions followed by green chillies, ginger, curry leaves, cumin seeds and crushed coconut.
Step 8
Mix the prepared meat and stir until the water is absorbed.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
