Beef Roast
Pan-fried until the edges go dark and crispy, this beef fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1 kg Beef
- 2 large Ginger
- 4 nos Garlic pods
- 1/2 kg Onion
- 1/2 kg Tomato
- 1/2 tsp Coriander powder
- Mint leaves A few, Pudhina
- Salt, to taste
- 1 - Oil
- 1 cup Yoghurt/Curd
- 2 - Green chillies
- 1 tsp *Spices powder
- *Cinnamon (Karugapatta)
- Cloves (Grambu)
- Pepper(Kurumulaku
- Aniseeds (Perinjeerakam)
- Cardamom (Elakka)
Preparation
Step 1
Grind together ginger, garlic, coriander powder and green chillies.
Step 2
Mix the above paste with yoghurt or curd.
Step 3
Add powdered spices to it and Stir everything together thoroughly.
Step 4
Rub this paste onto the beef and marinate for 1 - 2 hours.
Step 5
Pour oil into a pan and heat it or a kadai.
Step 6
Fry onions, till they become golden brown.
Step 7
Add marinated beef and fry for a while.
Step 8
Add tomato and mint leaves and salt.
Step 9
Add little hot water and cook on a medium heat.
Step 10
When the gravy becomes very thick, remove from the stove.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
