Beef Dum Biryani
Beef Dum Biriyani makes a Sunday lunch for your loved ones. Soft and succulent beef pieces combined with fragrant aromatic basmati rice makes a great meal. The wholesome nutritious Beef Dum Biriyani can be easily prepared at home.
Ingredientsfor 4 servings
- 3 cup Basmati rice
- 6 cup Water
- 1 Onion
- 1 Lemon
- 2 Cardamom
- 5 Pepper
- 3 piece Cinnamon
- 2 Bay leaves
- 1 tsp Cumin seeds
- 5 Clove
- Jathipathri a pinch
- 1 Tablespoon ghee
- Salt, to taste
Preparation
Step 1
For preparing Beef Dum Biriyani, first marinate the beef using turmeric powder, curd and salt. Keep it for 30 minutes.
Step 2
Get rice in a bowl. Meanwhile fry 1 onion and the dry fruits.
Step 3
Wash the rice and then drain off the excess water.
Step 4
Heat a pan and add ghee to it. Meanwhile keep 6 cups of water to boil.
Step 5
Next, add the cumin seeds, cardamom, cinnamon, bay leaves and clove, pepper to it and mix it well.
Step 6
Next, add 1 sliced onion to it.
Step 7
Mix and cook it, stirring well.
Step 8
Next, add the washed rice to it and give it a good stir, add lemon juice to it.
Step 9
Let all the water from the rice goes out, we can hear a kiri kiri type sound when the water fully gone.Then add the boiled water and salt to it and then close the pan and wait until the rice gets cooked.
Step 10
When the rice gets cooked, turn off the heat.
Step 11
Get green chilly, ginger and garlic to a mixer.
Step 12
Grind it well.
Step 13
Add this mix and pudina leaves to the marinated beef and Stir everything together thoroughly.

Next, add this beef to the pressure cooker and add tomato.
Step 15
Add 2 sliced onion and spices to it, add salt also, if needed.
Step 16
Then mix it well and close the pressure cooker, and wait for 6 to 7 whistles or until it gets cooked.

Then check whether it's cooked or not.
Step 18
Then heat a kadai and pour oil to it. When it's hot, add 1 sliced onion to it.

Mix it well.

When it is brown, lower the flame.

Add coriander powder to it.

Give it a good stir.

Add the beef along with the gravy to it.
Step 24
Mix it well and add lemon juice to it and let it let it bubble for 10 to 15 minutes.

Next, add the coriander leaves to it and off the flame.

Then heat a kadai and add ghee to it.

When it melts add the beef masala to it and then pour rice to it and repeat the procedure until the kadai fills and in the first layer it should beef masala and last layer should be rice.

Next, add some fried onion and dry fruits and some ghee and 1 tsp of rose water, coriander leaves and pudina leaves on the upper layer.
Step 29
Then close the kadai and keep some weight above it or paste a dough of all purpose flour above it.
Step 30
Wait for 20 minutes (should be in low flame) and serve hot.
Tip
Pressure cooking first saves time, but do not skip the dry-roasting step after — that is where the Kerala beef fry gets its signature dark, caramelised crust.
