Beans Thoran
The everyday side dish that Kerala never tires of. Beans is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 300 g Kg Beans
- 3 nos Shallots
- 2 nos Onion
- 1 cup Coconut — grated
- 3 nos Green chillies
- 2 nos Garlic cloves
- 1 tbsp Oil
- 1 tsp Mustard seeds
- Turmeric powder A pinch
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing the Nutritious vegetarian dish, first chop beans and onion into very small pieces.
Step 2
Grind together coconut, turmeric, shallots and green chillies into a coarse mixture. Do not grind to a paste.
Step 3
Heat 1 tbsp of oil in a pan.
Step 4
Add mustard seeds and when they allow to crackle, add chopped beans, onion, garlic and Stir everything together thoroughly.
Step 5
Add the ground coconut masala. Do not mix, but the beans should cover the coconut mixture.
Step 6
Add curry leaves and salt. Cook with a lid covered.
Step 7
Cook on a low flame for 5 minutes. Keep note that the dish should not be overcooked which will change the flavor of beans.
Step 8
Give it a good stir.
Step 9
Serve the dish hot. Beans is a very nutritious dish and this dish should be prepared at least once a week. This is one of the easiest of dishes that can be easily prepared at your home.
Step 10
For easy cooking, one can add coconut, onion, chilly directly to the beans without grinding.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
