Beans Stir Fry/ Beans Mehukupurati
Kerala-style dry fry where beans is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 10 nos Beans
- 1/4 tsp Turmeric powder
- 5 Or shallots
- 3 nos Green Chillie
- Curry leaves
- Salt
- Oil
- 1/4 tsp Mustard seeds
Preparation
Step 1
Chop beans to fine pieces.
Step 2
Set a pan over medium heat and pour in the oil and let the mustard seeds crackle.Add chopped shallots, curry leaves, green chillie and cook, stirring often, for a few minutes.
Step 3
Add turmeric powder and cook for another few minutes.
Step 4
Add chopped beans, enough salt and cook it closed for 15 minutes.
Step 5
Serve it with rice.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
