Beans Sprout Salad
A fresh, crunchy side that adds a cool contrast to the spiced dishes on a Kerala meal plate. Light seasoning, fresh ingredients, and a simplicity that lets each component speak for itself.
Ingredientsfor 3 servings
- 1/4 kg Beans sprouts
- 1/4 cup Coconut milk
- 2 tsp Lime juice
- 4 tbsp Chilly garlic sauce
- 2 tbsp Onion — chopped
- 2 tsp Coconut — grated
- 2 nos Green chillies — chopped
- 2 tbsp Spring onion
- Salt, to taste
Preparation
Step 1
For preparing beans sprout salad, boil beans sprout in a pan for 4 minutes. Strain and set aside.
Step 2
In a bowl, mix chilly sauce, spring onions, lime juice, onion, coconut, coconut milk and salt.
Step 3
Add the beans and Stir everything together thoroughly.
Step 4
Add green chillies on top and serve. Beans sprout salad is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
