Beans Parappu Usili - Brahmin Special
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1/2 kg Beans — chopped
- 1/2 cup Urad dal parippu (Uzhunnu)
- 1 cup Channa dal
- 4 nos Red chillies
- 1 tsp Turmeric powder
- 2 tbsp Coconut oil
- 1 tsp Mustard
- Salt, to taste
Preparation
Step 1
Soak channa dal, urad dal and red chillies in water for a few minutes(10 minutes).
Step 2
Grind the soaked item by sprinkling sufficient quantity of water.
Step 3
Cut and wash beans and boil in water. Add turmeric powder and salt.
Step 4
Fry mustard seeds in coconut oil and add the second step item to it and fry this for a few minutes.
Step 5
Add the boiled beans(step 3 and remove water from it) and mix all items together very well and cook the same for about 3 to 4 minutes.
Step 6
Beans Paruppu usili - brahmin special, is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
