Bean Carrot Fry
Bean carrot fry is a classic south indian preparation of mixed vegetables.carrots are an excellent source of vitamin A and C.beans are a great source of fiber,vitamins and minerals.
Ingredientsfor 3 servings
- 1 Carrot big
- 6 Beans
- 1 Clove Garlic
- 3 Green chilly
- 1/4 tsp Mustard
- Salt, to taste
Preparation
Step 1
Cut the vegetables.more we increase the size of vegetables it reduces the risk of discoloration,flavour loss,texture loss and nutrient loss.
Step 2
Grind garlic and green chilly.
Step 3
Let 1/4 tsp mustard allow to crackle in hot oil and add the veggies init.if using other veggies you can also add them now.fry for 2-3 minutes on a medium flame until the raw smell of the beans goes off.
Step 4
Add salt,grinded green chilly and garlic.lower the flame,Put the lid on and cook until the veggies turn cooked.
Step 5
You can serve the bean carrot fry with plain rice or any other flavored rice.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
