Basic China Grass Pudding
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 6 servings
- 10 g China grass
- 500 ml Milk
- 5 tbsp Sugar
- 1/2 Tin Condensed milk
- 1/2 tsp Vanilla essence
- 1 cup Water
- 3 tbsp Coconut
- 2 tbsp Sugar
- 1 tbsp Cashew nut small pieces
Preparation
Step 1
Soak china grass in 1 cup hot water.
Step 2
Mean while boil milk and add sugar and condensed milk. Set aside.
Step 3
Melt the china grass in low flame and pour this into hot milk mixture and give it a good stir. Add vanilla essence for flavor.
Step 4
Pour this mixture in a pudding tray. Refrigerate when cool.
Step 5
For topping, heat a non-stick pan and roast the ingredients for topping in low flame until brown in color.
Step 6
Add topping while serving.
Step 7
Note: In order to prevent milk curdling, stir constantly.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
