Banana Vada(Pazham Vada)
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- 4 nos Ripe bananas
- 200 g All purpose flour Maida
- 100 g Sugar
- 4 nos Cardamom (Elakka)
- 1 tsp Baking powder
- Water, to taste
- Oil, to taste
Preparation
Step 1
Mash bananas completely.
Step 2
Add sugar to mashed bananas. Mix it.
Step 3
Add white flour, baking powder and ground cardamoms to the above mix and give it a good stir.
Step 4
Add enough water to get consistency thicker than dosa batter.
Step 5
Warm the oil in a kadai.
Step 6
Get a little dough using a tablespoon and drop it in medium hot oil.
Step 7
When the vada becomes golden brown, remove from the oil.
Step 8
Serve it when it is cool.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
