Banana Roast
Slow-roasted in coconut oil with a generous hand of spices, this egg fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 2 nos Banana — cut into small pieces
- 1 nos Egg
- 1 cup Coconut — grated
- 3 tbsp Sugar
- 1/2 tsp Cardamon powder (Elakka)
- 2 tbsp Ghee
- Cashew nuts, to taste
Preparation
Step 1
Place a pan on the stove and pour ghee. Add banana pieces and sauté.
Step 2
Keep stirring until golden yellow in color.
Step 3
Stir in the egg and blend it nicely with banana pieces.
Step 4
When egg is cooked, add grated coconut and sugar and stir for 5 minutes.
Step 5
Add cashew nuts and cardamon powder. Turn off the fire. Serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
